Pork Rind Appreciation Day, Who Knew?
There seems to be a holiday or appreciation day for all kinds of things and when I found out about Pork Rind Appreciation Day I have to say I wasn’t surprised, but I had to share because Rudolph’s Foods, based in Lima, Ohio started Pork Rind Appreciation Day in 2010 and since then they’ve been using it at a way to raise funds for the Gridiron Greats Assistance Fund, a nonprofit organization that provides medical and financial assistance to former National Football League (NFL) players.
The Gridiron Greats Assistance Fund’s mission is to assist retired NFL players in need who were pioneers of the game and who have greatly contributed to the NFL’s status as the most popular sport in America. The Fund provides hands-on assistance to help retired players and there families deal with medical hardships they face after careers in football. One of the football legends they are working closely with is former Cincinnati Bengals quarterback Ickey Woods who is known for the Ickey shuffle. He was able to get both of his knees replaced with the help of the Gridiron Greats.
Celebrated on the biggest football day of the year, and on the first Sunday of February, Pork Rind Appreciation Day has become an annual event to celebrate how pigskin and pig skins go together. Low Carb Pizza Crust
Ingredients
1 cup Pork Rind Flour
1 cup Shredded Parmesan Cheese
2 Eggs
2 Tbsp Minced Garlic
2 Tbsp Italian Seasoning
Pizza toppings (as desired)
Directions
To make Pork Rind Flour grind up Pork Rinds into a powder state, remove any large pieces.
Pre-heat oven to 350*. Spray or oil a tin pie pan. In a bowl mix the egg, pork rinds, Parmesan cheese,Minced Garlic and seasoning well.
Pour mixture into pan and spread to the sides from the middle by pressing outwards with your hands. If the mixture sticks to your hands wet them with water and it will spread smoothly. Bake for about 10 minutes or until golden brown.
Remove and add desired toppings and put the pizza back under the broiler until toppings are hot and cheese is melted.
