Fruity Pebbles Confetti Pancakes
I love trying out new recipes, especially ones that my kids will love and are delicious as well. When I was contacted by the folks that represent Post Foods to share some recipes with my readers I jumped at the opportunity. I couldn’t wait to try it with the kids. We received four boxes of Pebbles cereal to use for any of the recipes that I decided to give a try. I will say that mines looks nothing like the beautiful picture I was provided to share with the recipes. We decided on breakfast for dinner one night and I knew we would have to try the Fruity Pebbles Confetti Pancakes. These were to easy to make and the kids absolutely love them. You can use both Fruity and Cocoa Pebbles for this recipe and it’s sure to be a hit.
I had my griddle too hot so mines came out a darker than I wanted. I also used Mickey Mouse cookie cutters to cut them into shapes for the kids. They enjoyed theirs with a little syrup and some bacon. I hope you do give these a try and remember to keep your flame low when you do make them and only cut into shapes once your pancakes has cooled.
Ingredients
- 3 cups Fruity Pebbles Cereal, lightly crushed
- 1 cup flour
- 2 tsp. baking powder
- 2 eggs
- 1 cup milk
- 1 container (6 oz.) vanilla low-fat yogurt
- 1-1/2 cups sliced strawberries
Directions
- Mix cereal, flour and baking powder in medium bowl; set aside. Beat eggs and milk with wire whisk until well blended. Add to cereal mixture; mix well.
- Preheat large nonstick griddle or skillet sprayed with cooking spray on medium heat. Ladle batter onto griddle, using 1/4 cup batter for each pancake. Cook until bubbles form on tops, then turn over to brown other sides.
- Serve topped with the yogurt and fruit.
