For weeks the kids had been asking about making S’mores. It’s summer so who doesn’t want a nice warm S’more for an after-dinner treat or a mid-day snack.
We make ours indoors most of the time. I purchased a gadget a few years ago that made it easy to make them inside or I would roast the marshmallows over an open flame on the stovetop and we would make them that way. So finally on my last visit to Safeway, I picked up some items for S’mores.
Right now Safeway is having their Huge Sale and last week they had a special on brownie mixes. I’ve made brownies from scratch or from boxes but lately, I’ve been wanting brownies but didn’t want to hassle of baking from scratch. Lucky for me Safeway was holding their Huge Sale and had a great offer on Pillsbury Brownie Mixes for just $1 a box.
Making S’mores Brownies are so much easier than you think. For this recipe, I used a box mix but you can certainly make your own brownies from scratch. Mix the brownies according to the directions on the box.
Bake for about twenty minutes and then remove from the oven. You can take the brownie out as soon as the ends start to get a bit crispy. I put foil in the dish so it’s easier to remove at the end of baking.
S’mores wouldn’t be the same without chocolate bars, marshmallows and graham crackers. We are huge fans of Hershey’s Chocolate here so of course we used those bars but you can use any kind you prefer for this recipe.
Break apart the graham crackers and chocolate bars into bite size pieces and spread on top of the brownie and with the marshmallows. Return to the oven and bake for an additional fifteen to twenty minutes.
Remove the S’mores Brownies when the marshmallows are golden brown. This time I used regular sized marshmallows but the next time I plan to use minis because I think they would bake differently.
Ingredients:
- 1 box brownie mix
- 8 graham crackers (broken into bite size pieces)
- 4 Hershey’s Chocolate Candy Bars (chop into bite sized pieces)
- 1 bag mini marshmallow
Baking Directions:
Step 1 |
Preheat oven to 350 degrees F. Line a 9×13-inch glass pan with aluminum foil and spray with cooking spray. Prepare brownie mix according to directions on the package. Spread into prepared pan. Bake brownies for about 20 minutes. Remove from oven. |
Step 2 |
While the brownie is baking preparing the topping. Break the graham crackers into bite size pieces, cut up the chocolate bars and mix in with the marshmallows. |
Step 3 |
When you take the brownies out sprinkle topping over top. Return to the oven for an addition 15 to 20 minutes, until marshmallows are golden brown, and a toothpick inserted into a non chocolate-covered area comes out clean. Allow brownies to cool completely. |
Step 4 |
When brownies have cooled, remove from pan by lifting the edges of the foil lining. Invert brownies onto a cutting board and remove foil. Place brownies right-side up on cutting board and cut into squares. Store in an air tight container. |
We couldn’t wait to cut into our brownies. These were so delicious and I am so glad we decided to give them a try. These are best served warm but I promise you it’s also good at room temperature. The next time you have to bring a dessert to a function try making these gooey brownies.

Notes
I used regular sized marshmallows when I baked my brownies but I have also used mini marshmallows and prefer the mins. You can use either with you. You can also use any brand of milk chocolate you choose.
