Chocolate Peppermint Bark Cookies
Giant Foods sent me a package of their limited edition peppermint flavored items. Included in my mailer was a package of double filled peppermint sandwich cream cookies, a box of peppermint whoppie pie mix and a pack of peppermint bark. I was so excited about the box of peppermint goodies I didn’t know what to do. I opened up the pack of sandwich cookies and I was immediately in heaven. They were spectacular. I had to put the pack away or I would eat them all on the spot.
I was thinking about what I should do with the peppermint bark. My first thought was to give it to my sister but I was in the mood for baking and decided to use it for baking instead.
Giant Food introduced the assortment of peppermint Limited Time Originals private label items that has more than 50 seasonal peppermint-filled products in both the non-perishable and fresh departments are now available for a limited time only at Giant.

To make this recipe I used a Chocolate Chocolate Chip recipe and re-purposed it to create this recipe. Instead of using chocolate chips I used the peppermint bark. It was easy to break apart into small pieces. I do suggest you get them to bite sized pieces for baking. That way when the cookies are done you get even bites of peppermint bark and cookies.
