Celebrate National Mojito Day with Ole Smoky
I love a good Mojito. I will always remember my first time having the refreshing drink. It was the summer after I graduated college and landed my first job. I worked in a college financial aid office and we had an off campus training session. That afternoon we all headed out for drinks at a cantina. One of my co-workers ordered a pitcher and two hours later we were all laughing and dancing and working on our fourth pitcher. The drink has evolved so much and now there are so many varieties, it even has it’s own celebratory day on the calendar. Pineapple Mojito
1 cup Ole Smoky Pineapple Moonshine
1 bunch fresh mint (stems discarded)
2 limes (each cut into 8 wedges)
½ cup sugar
1 cup club soda
Muddle the sugar, mint, and lime in the bottom of a glass.
Pour pineapple moonshine and club soda and serve.
Garnish with limes and pineapple wedges.
Makes 4 servings.
