Simply Shepherd’s Pie

I love fall just because I love baking. Don’t get me wrong I can bake all year round but its just something about the fall and winter that makes baking so much fun. The smells and the oven warms up the house just right. I was given the opportunity to work with one of my favorite brands again – Simply Potatoes, and I was super excited to see what I would whip up using their products this time. So far I’ve made Au Gratin Potatoes and a Breakfast Bake that you must check out and give a try. So I wondered what I could do this go round. The hardest part was choosing what product to use. The Simply Potatoes product line includes the new Steamables, Cut Potatoes, Mashed Potatoes and Side Dishes.
What I love the most about Simply products is that it makes cooking a bit easier by removing steps from recipes. When I first made the Au Gratin potatoes it was because I loved them but couldn’t find a good product currently on the shelf that I loved. Simply made it so easy to create with their fresh sliced potatoes. I just added some ingredients and less than an hour later my family and I were enjoying the best Au Gratin potatoes ever. This time I decided to make an easy Shepherd’s Pie. I love this recipe but I just don’t like the idea of having to make mashed potatoes first and then meat portion of the dish. Simply took a whole recipe out of the process making this a Simply Shepherd’s Pie. It’s easy to make and it’s a dish your family will enjoy during the fall. Here’s the recipe below:
Simply Shepherd’s Pie

- 1 1/2lb ground beef (you can use any kind of ground meat you choose)
- 1 can green peas
- 1 can corn (or mixed veggies)
- 1 can diced tomatoes
- 1 jar beef gravy (your gravy choice would depend on your ground meat choice)
- 1/2 teaspoon salt
- 1 packet Simply Mashed Potatoes
|Heat oven to 375 degrees and spray a 2 1/2 casserole dish with cooking spray. If you don't have a casserole dish use a 9 inch baking pan.|
|In a skillet cook the ground beef until brown, drain the grease and add in your peas, corn or mixed veggies, tomatoes, gravy and salt. Season to your own taste. While this is cooking make sure your Simply Mashed Potatoes are warm (you can do this in the microwave)|
|Spread the beef mixture in your casserole or baking dish evenly and then spread with Simply Mashed potatoes evenly. Place in the oven and bake for 30 to 35 minutes. Remove from over and serve warm.|
I also had an extra package of shredded potatoes and decided to make a different play on steak and potatoes. I just got some thinly sliced beef, sauteed it, then I cooked up the potatoes till they were a little brown and added it to the steak and served. It was a easy fun dish. Hubby loved it.
