Lemon Brownies

Lemon Brownies

I am not a very big fan of lemons but my husband loves them.  He adds them to his water to improve the taste and he also likes any dishes that has lemons included.   The recipe is called Lemon Brownies but being that it’s not brown at all I think it should be Lemon Blondies.  When I found this lemon brownie recipe online I tried making it right away.  I doubled the recipe because I wanted to make some extras for him  to take to his students.  I realized that the baking time seemed low but I went with it and it was a great trial and error for me because now I know and I can tell you that the time I got on the site was way too low.  The brownies were seriously under-baked and the batch was a waste.  When I re-made them I just did a single batch and it was excellent.

These were an absolute treat, I knew they would be when I found the recipe and decided to give them a try.  I am certainly making them a few times this summer, especially when I can get lemons for a great price.  Like any lemon dish you make you can add or decrease the lemon juice to suit your own taste.  My family likes it tart so I generally add more lemon juice and I love including the grated lemon peel as well.  I hope you give this recipe a try and if you do let me know how you and your family enjoyed it.  I should also add that I think blueberries would be great in this lemon brownie.  I think I’ll have to try that when blueberries are in season.  Experiment with yours and see what other combinations you can come up with.
