I recently shared on my baking fan page Nicki’s Sweet Treats that I was planning on making a different cupcake a week fifty two weeks.  While I have to admit already it’s been a bit harder than I thought I am still working on sticking as close to the challenge as possible.  That’s still my goal and I don’t want to change it so I aim lower.  This past weekend was so hectic I didn’t get to make the cupcake I wanted but I did get the baking edge and decided to make some Chocolate Chip Muffins instead.  It’s not that I didn’t want to make cupcakes its just I was missing ingredients (note to self – make shopping list for cupcake challenge in advance).  Any how I felt like muffins so I made me some.

The recipe was super easy to make and as you can see from my batter I wanted to add a good bit of chocolate chips.  You can add as little or as much as you please in the recipe.  The end result was amazing for me.  Watch the cooking time because it can vary based on each oven you don’t want it to dry out.

These muffins are great. It taste like you brought it from a store. It's not too sweet nor is it bland. Its just right. If you like chocolate then you will love these.

Ingredients

  • 2 cups all purpose flour
  • 1/2 cup white sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cups milk
  • 1/3 cup oil
  • 1 egg
  • 3/4 cups mini semi-sweet chocolate chips

topping

  • 3 tablespoons white sugar
  • 2 tablespoons brown sugar

Note

You can change this recipe to make any kind of muffin really.  If you want blueberries, you can add oatmeal to it, bananas and nuts.  Whatever you want to make it your own.

Directions

Step 1
Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
Step 2
In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter may be lumpy.)
Step 3
Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
Step 4
Bake for 16 to 20 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

    Sooooo yummy. I think this would be something my son would enjoy doing. I usually do a family movie night with him, at least 2x a month. This would be an additional thing we can do as a family to bond.

    Those look delicious. I know my kids would be devouring them. :) I am proud of you for setting 52-weeks of cupcakes/muffins. I can imagine it being hard, but I know you will have great recipes and creative ways to make sweet bites. Good luck!

    I have never thought to add topping to chocolate chip muffins. I am going to have to try that (and your recipe!). I’m going to pin your recipe as well as I host an Easter brunch every year and am always looking for new recipes to add to it.

    They look delicious and I’ll take a muffin over a cupcake anyday. Have you ever used any of the new alternatives to sugar that have become so popular? Stevia, etc…your thoughts?

      NO I haven’t tried baking with any of those yet. Now that you mention it though I know Splenda has a brown sugar that you can bake with. I will have to look into it and give it a whirl and see how it measures up.

    52 weeks? I’m finding it difficult to maintain consistency with a 31 day challenge. :)

    Baking is not my gift so I’m glad there are people out there who can cook because I love eating.

    Those do look yummy – the chocolate chips the better right?

    I like recipes where you can make substitutions because then you really only need to have the base recipe and add what you want. (blueberries or more chocolate)

    Good luck with your goal of 52 cupcakes goal and Yes, do plan a shopping list or better yet make sure each time you shop you add to your cupcake pantry stash.

    Your choc chip muffins look amazing.

    When I bake, something usually comes out too ‘off’ to take a perfect picture – they’re overflowing, browned too much, or puny-looking.

    That’s cool to have a challenge to look forward completing for the New Year! Maybe if you miss a week, you could double-up on the next…to make a monthly goal? I LOVE cupcakes and looking forward to experimenting with recipes that fit into my new wheat-free, sugar-free diet plan. I have my eye on this recipe for Mini Mocha Cakes.

    Mmm, those look absolutely delicious! I’m going to the store today to pick up some ingredients for some other goodies I want to make. I’ll have to pick stuff up to make these! I’m sure my family will love them. :)

    These look soooo yummy and recipe actually looks like something I might not screw up. I love to bake with my kids, but when it comes to the kitchen I seem to have ADHD. I made a box mix of blueberry muffins last week and forgot to mix in the berries. Thanks for the recipe!

      LOL that’s funny but it has happened to me before. I usually forget the baking powder or baking soda if I don’t pull it out from the start of the recipe prep.
