I love cooking and baking and trying new recipes.  I was recently given the opportunity to review Pompeian Extra Virgin Olive Oil and I was thrilled.  I didn’t know what to make or where to start so I headed to a few recipe sites looking for inspiration.  I honestly have to say that I’ve been sleeping on Olive Oil.  I didn’t realize how many recipes you can use it in.  You can virtually use it for any recipe that calls for oil and Pompeian offers a variety of choices for grilling, sauteing, baking, dressings and more.  I actually made a few dishes with the olive oil.

Pasta Salad

So the first thing I used it for was a pasta salad.  I had some pasta from my Pasta Shoppe package and there was a Pasta Salad package that contained all the seasoning I just need to add oil and vinegar.

Then I just had to boil the pasta and add the dressing to the pasta and refrigerate.

Maryland Terps Pasta Salad

The finished pasta salad.  I didn’t stop there though.  I also baked corn bread from scratch to go along with dinner that night.  I love making my own corn bread because I can control how sweat I make it and it’s really so easy to make.

So here’s dinner with the corn bread on the plate.  The recipe is posted below.  Next time I am going to try using olive oil in a dessert recipe and see how it goes.  You couldn’t tell any difference and my whole family loved it, especially my husband.

I like this recipe because I can change it and make it fit my family. I usually add about a cup of sugar since my husband likes it sweet. Sometimes I use white corn meal instead of yellow or I mix them. I love using the round cake pan but you can use muffin pans, square pans or loaf pans. Also know your oven, if 25 minutes at 400 is too much or too little you will know adjust for you own oven.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2/3 cups white sugar
  • 1 teaspoon salt
  • 3 1/2 teaspoons baking powder
  • 1 Large egg
  • 1 cup milk
  • 1/3 cup Pompeian Extra Virgin Olive Oil

Directions

Step 1
Preheat oven to 400 degrees F (200 degrees C). Spray or lightly grease a 9 inch round cake pan.
Step 2

  1. Love the recipe idea.. Wish the Pastabilities was available here. We don’t even have anything remotely near that here. Would be easier to get the kids interested… If you would like to see my Pompeian post click on my name.. Would love the feedback…
