Growing up in Trinidad I would also see my father eating Avocados, except in Trinidad we call them Zaboca. We had four different varieties growing in our garden but as a young child you couldn’t get me to try them at all. My father would pick them before they got over ripe on the trees and wrap them in brown paper until they got that just ripe feel to them. He would then slice them in half, remove the pit and skin, then cut them in slices and eat. It wasn’t until we moved to America and tried Southwestern food for the first time, that we came across Guacamole. I have been in love with all things Avocado since. I love Whole Guacamole because you get to enjoy delicious guacamole in the comfort of your own home and you can put this stuff on just about any and everything you eat. Recently I had the amazing opportunity to review the newest product in the guacamole line, the Avocado Ranch Minis. When I say it was a hit among my family and friends I meant it.
Look at all the goodies we got to try.
Deciding what to make was hard but I just ended up making some quick and easy Chicken Quesadillas. They are very simple to make and people can put it together their own way. I simply marinated some boneless, skinless chicken breast. I got the ones that were sliced very thin. I grilled them up on my electric table top grill, cut them up in pieces and started to make the quesadillas from there.
After I cooked and cut up all the chicken I started with the next step. I place a tortilla on a plate, arranged a the chicken on the tortilla, sprinkled with cheese and put the other tortilla on the top. It’s really up to you how you decide to build your quesadillas. You can use two tortilla shells or just one, you can also apply a sauce or anything else you want to make it suit your own taste. I just used chicken and cheese on mines since kids were going to eat them and I didn’t want them to reject it because of sauce or veggies. We have a quesadilla maker so I just put them in, press and two minutes later…
They are done and ready to eat. I just cut them in small triangles and serve.
Using the minis were super easy and it made it easy for us to just use what we wanted. One of the worst things about guacamole is that it has a short shelf life. If you leave it exposed to air too long it starts to turn brown and no one will want to eat it then. These cups prevent you from ever wasting your guacamole. They are perfect for lunch, snacks and picnics. The Avocado Ranch was a huge hit, even my husband who never eats Guacamole gave it a go and he enjoyed it so much he had seconds. My mom was the biggest fan though. She ate it on her quesadillas, with chips, on sandwiches, turkey burgers and all by itself. She was so sad when she ran out of packs. She has already brought them on two different occasions. Even my kids liked it. I think it’s the ranch flavor that they enjoyed the most but I was just happy they wanted to give it a try.
My dad of course went for the only Avocado with his and he really enjoyed it as well. Next I want to try to make these delicious Deviled Eggs recipe that I found on the Wholly Guacamole website. if you want to give it a try check it out below…
