Growing up in the islands I am very family with coconuts. I could just close my eyes and remember picking a fresh coconut from our Asian coconut tree and my
father cutting off the top and me drinking the cool coconut water. Did you know before the coconut gets hard enough for it to be grated and turned into coconut milk and other coconut items its a soft jelly like constancy. Its soo good to scoop it out with a spoon after drinking the water. I could go on and on telling stories of those days and being young and carefree. At the time I didn’t even realize how healthy it was and that when my siblings and I made the choice to have a coconut instead of junk food we were doing something good.
So you imagine how excited I was to try Tropical Traditions Coconut Oil. I remember people using it back home but I didn’t have a recipe stored in my head to use it for. See coconut oil has so many uses. People back home would use it on their skin or use it in their hair to help them achieve softer skin and prevent their scalp from drying out. I started looking online for some inspiration about what I could try my coconut oil in. I found that it’s very popular in gluten-free cooking. Since I don’t have a restricted diet I wanted to make sure I whatever recipe used could be converted and used without problems for my cooking needs. I really wanted to make some fudge but I was missing an ingredient and so I ended up making a healthy version of fried chicken using the coconut oil.
I just brought a new induction oven and I thought it would be perfect to air fry the chicken in my induction oven. I didn’t coat the chicken with flour or anything just left it naked. Here’s some photos of my chicken fried in coconut oil

I never tried cooking with coconut oil, thanks for the info! It also works really well in your hair, as a hot oil treatment, by the way!
I did know you can use it in your hair. In Trinidad we would use it on our skin as well to clear up stretch marks.

There is so much you can do with it and I found it used in lots of gluten free cooking.

Yes I love my induction oven. Its a Fagor. It’s great for days when I don’t want to use my big oven and its super fast and the food is always tasty.
